Let’s just accept this fact; life gets crazy-busy, every day. Both our calendars are time blocked, highlighted with different colours, and managed by the hour; but no matter how busy we get we never fail to make time for breakfast! A good brekkie is like fuel for your engine, and if you’ve ever skipped breakfast you know what it’s like to run on empty. So what does breakfast look like for us? We share with you three of our favourite breakfast recipes that suit three different types of mornings.
FOR A QUICKIE
Even when we’re busy getting the kids ready for school, this upgraded version of the humble avocado on toast is easy to make, and fast to consume, giving us energy and a full tummy for a few hours.
It is loaded with good oils and flavours that give your tastebuds a good little wakeup call.
UPGRADED AVOCADO ON TOAST
On a slice of whole wheat bread, spread some low fat ricotta cheese, and top with generous slices of fresh avocado. Upgrade this favourite with sweet cherry tomatoes, crushed pistachio nuts and season with Himalayan pink salt.
FOR A BREKKIE IN UNDER A MINUTE
For the mornings where we’re literally running out the door, starting our day with a smoothie is the best way to have breakfast on the go. We make jumbo sized smoothies (600ml) which we sip as we go and finish off in the car.
To eliminate preparation, once a week we chop a whole heap of fruit and allocate it into different zip lock bags which we pop in the freezer. Then all that we need to do in the morning is pick a bag, enter the contents into the blender and breakfast is ready in under a minute!
OUR FAVOURITE SMOOTHIE RECIPE
In our nutribullet, we add:
Half a banana, a handful of toasted organic oats, one handful of baby spinach, half an avocado, ¼ cup frozen blueberries, a drizzle of honey, 2 tbsp. of natural unflavoured yoghurt, 1 teaspoon chia seeds, and top with filtered water or almond milk.
FOR YOUR MORNING INDULGENCE
We aim to eat mindfully every morning, so to counteract the fast paced days, we make sure we schedule in some mornings when we can afford to have a proper sit down and only focus on having breakfast. That means no phones, no email checking; nothing else but enjoying a healthy, indulgent breakfast.
This recipe is by far our favourite, it looks pretty and it tastes amazing
BERRY BREAKFAST BOWL
In a bowl, layer unflavoured probiotic yoghurt, blueberries, raspberries, strawberries, dried cranberries, dried acai berries, crushed almonds and coconut flakes. Then add a sprinkle of LSA mix, 1 tbsp. nut butter and finish off with 1 tbsp. of real maple syrup.
